Simple Overnight Oats with Pumpkin

Did you know that overnight oats are quickly becoming the healthy breakfast go-to for many people, including myself? It is not just that oatmeal made in this manner is delicious, but it is also convenient as your breakfast is ready by the time you wake up in the morning. If you use mason jars with lids, it’s also easy to bring with you to work or school (Bonus!).

Here are two easy ways you can make overnight oats using pumpkin. For all of these recipes listed in this article, you can simply adapt the quantity of the ingredients that you use according to your preferences.

Pumpkin Chocolate Chip Overnight Oats

This first recipe is wonderful if you have a bit of a sweet tooth (like I do!) or simply want to try something different with your overnight oats. They taste like pumpkin and fall spices, while also having some chocolate chips in there to make it delicious and feel more like a treat.

You Will Need:

  • mason jars, or other containers with lids

Ingredients:

  • ¼ cup rolled oats
  • ¼ cup pumpkin puree
  • ⅓ cup Organic Almond milk or regular milk
  • ½ teaspoon pumpkin pie spice
  • 3 teaspoon maple syrup
  • 2 tablespoons of chocolate chips

Instructions:

  • Place the oats, pumpkin puree, pumpkin pie spice, almond milk, maple syrup and chocolate chips in a pint sized mason jar.
  • Cover the jar and shake well. You can also stir it if you prefer.
  • Place in the refrigerator overnight. After the oats have been set up, top it off with a few chocolate chips and enjoy!

Pumpkin Pecan Overnight Oats

Another fun variation that is still healthy and easy to make is over night oats using pecans. If you enjoy pecan pie and pumpkin pie, you can put them together into one overnight oats recipe.

You Will Need:

  • mason jars, or other containers with lids

Ingredients:

  • ¼ cup rolled oats
  • ¼ cup pumpkin puree
  • ⅓ cup Organic Almond milk or regular milk
  • ½ teaspoon pumpkin pie spice
  • 3 teaspoon maple syrup
  • 2 tablespoons of pecans

Instructions:

  • Place the oats, pumpkin puree, pumpkin pie spice, almond milk, maple syrup and pecans in a pint sized mason jar.
  • Cover the jar and shake well. You can also stir it if you prefer.
  • Place in the refrigerator overnight. Enjoy!

These are just two delicious options, but you can get creative and make your own pumpkin overnight oats recipe.
